Fedegroup reopens the kitchen of Orto Green Food & Mood, the Starhotels E.c.ho restaurant in via A. Doria 4, in Milan, with a pioneering offer in terms of sustainability and transparency of the food chain according to Green Globe standards of which Starhotels E.c.ho is a Gold Member from 2019.
For the new lunch and dinner menus, the Fedegroup team of chefs together with Marcello Forti – founder of Fedegroup – have designed two menus based on local produce, healthy food and raw materials from a transparent, first-rate supply chain.
From PDO cheeses and cured meats to organic and PGI vegetables, including Slow Food presidia, each ingredient has been selected for its nutritional and social value, and contributes to the creation of healthy dishes rich in fragrance, taste and creativity to meet every need and dietary style, from gluten-free to vegan and vegetarian.
The new menus are accompanied by a new service for food waste management. Thanks to a partnership with Too Good Too Go, it will soon be possible to order take-away boxes with daily fresh produce and dishes that are surplus to requirements in the dining room at a competitive price via the app.
Fedegroup has revolutionised food waste management for Starhotels E.c.ho by creating a circular system which, thanks to composting techniques, uses the remaining raw materials from kitchen processes to “feed” the hotel’s urban garden, significantly reducing the impact and quantity of waste. This choice fits in perfectly with Starhotels E.c.ho’s model of self-sufficiency, which boasts its own production of seasonal fruit and vegetables in addition to an innovative system of self-sufficiency in energy terms.
